Just last month, the Lyons Area Chamber of Commerce held their monthly social at the CrossFit St. Vrain gym. The well-attended affair was catered by Lyons resident Bobby Clark of Clark’s Catering. Clark has been working as a chef for nearly four decades. He got his start as a young kid training as an apprentice under a Master Chef from Switzerland. Once bitten by the cooking bug, he enrolled and graduated (class of 79) from the Kansas City Culinary Institute. Since then he has spent his life moving up through the ranks of Sous Chef to Head Chef at various Country Clubs, retirement communities, and the University of Missouri (Columbia).
Eight years ago, he and his family (wife, Diane and two sons, Bo and Luke) moved to the Lyons area, where he served as the Executive Chef at the Peaceful Valley resort for five years. He recently decided to open his own catering business, for weddings, graduations, birthdays, anniversaries, meetings, etc. He also works as a personal chef work, and once a month, in conjunction with The River Church, whips up tasty Monday night meals for the seniors at the Walt Self Senior Center for the Lyons Golden Gang, as well as volunteering for the O.U.R. Center in Longmont. Clark also plans to teach cooking classes (where he promises to give out his personal recipe for his award winning pork).
