Newly re-named Lyons Fork Restaurant (formerly Cilantro Mary) is holding its grand opening week from Feb. 17 to Feb 26.“Our old name didn’t reflect our focus or the quality of our food,” said co-owner Wayne Anderson. “So we’ve renamed the place and are putting on some cool events that showcase what we’re all about.” The restaurant serves a brand of gourmet New American cuisine that stretches from Ahi Tuna Ceviche Tacos and Braised Short Ribs, to Chocolate Graham Torta and Beet Mousse . “It’s five-star cuisine without the five-star frills,” Anderson says.
Lyons Fork’s focus on premium ingredients and fare carries over to its beer list. The cozy, 40-seat eatery features the best craft beers from across Colorado and around the country. The restaurant has a short-but-sweet rotating list of draft beers. It’s matched with an extensive bottle and can selection featuring some of the nation’s most respected breweries.
Wayne and his wife, (and co-owner) Debbie Anderson, met while they were both working in the Craft Beer business. The two share a passion for interesting and esoteric beers and the culture of craft beer. “We really love the people and inventive, supportive culture of the craft beer movement,” says Debbie Anderson a former heavy with California’s Stone Brewing. “We also love the beers and their ability to pair with exceptional food. And there aren’t enough places in Boulder County where you can get a great meal with a great beer.”
Lyons Fork gets its new name from its location at the fork in the two main roads of Lyons, and the town’s position at the confluence of the North and South Forks of the St. Vrain River. And of course, you’ll need a fork to enjoy many of the restaurant’s offerings.
The restaurant features a comfortable, relaxed setting that echoes the Town of Lyons’ passion for high quality living with small-town charm and heart. Currently, Lyons Fork is open six days a week for happy hour and dinner, and closed on Tuesdays. Saturday and Sunday feature brunch starting at 10 a.m.
