Each month, the Colorado Department of Agriculture features a different commodity to highlight the variety and quality of products grown, raised or processed in the state. This month the recipe features pork in the Smoked Colorado Pork Belly recipe.

There are nearly 700,000 hogs in Colorado valued at $90 million, and the state ranks 16th in the nation for hog

production.
